How to Prepare a Delicious Stir-Fried Shrimp with Curry Powder and Pasta

Ingredients:

  • 7-8 large tiger shrimp, peeled and deveined
  • 1 spring onion, chopped
  • 2 tablespoons of chopped onion
  • 1 tablespoon of white soy sauce
  • 1 tablespoon of oyster sauce
  • 1 tablespoon of palm sugar
  • 1 teaspoon of salt
  • 2 tablespoons of condensed milk
  • 3-4 curry leaves
  • 1 chicken egg, beaten
  • 1 tablespoon of vegetable oil
  • Cooked pasta

Cooking Time:

  • Begin by washing the shrimp thoroughly and deveining them. Set aside.
  • In a small bowl, mix together the beaten egg, curry powder, palm sugar, soy sauce, oyster sauce, and salt. Stir well until the sugar is dissolved.
  • Heat a pan over medium heat and add the vegetable oil. Once hot, add the shrimp and stir-fry until they are cooked through.
  • Add the beaten egg mixture and stir quickly until the eggs are cooked and coated evenly on the shrimp.
  • Add the curry leaves, chopped onions, and spring onions. Stir-fry for another minute until the onions are soft and the curry leaves are fragrant.
  • Add the condensed milk and stir until everything is coated evenly. Turn off the heat and remove the pan from the stove.
  • Serve the stir-fried shrimp and sauce on top of a bed of cooked pasta.

Cooking Tips:

  • When selecting shrimp, choose fresh shrimp that are still firm and have no unpleasant odor.
  • To prevent overcooking the shrimp, stir-fry them until they are just cooked through. Overcooked shrimp can become tough and rubbery.
  • For the stir-fried eggs, be sure to stir until they are soft and smooth.
  • Use vegetable oil or another neutral oil for stir-frying to prevent the dish from having any unwanted flavors.
  • Add the spring onions and curry leaves at the end of the cooking process to preserve their color and aroma.
  • Enjoy your delicious stir-fried shrimp with curry powder and pasta!
